I seriously can’t stop thinking about Banh Xeo that golden, crispy Vietnamese pancake that’s bursting with flavor. The crunch of the outer shell, the tender shrimp and pork inside, the fresh herbs, the tangy dipping sauce… every bite was unforgettable. I wish I could sit at that little street-side spot again, surrounded by the sounds of scooters and sizzling skillets, just soaking it all in. Traveling really changes the way you see the world, especially through food. Each dish tells a story, and Banh Xeo is one I’ll never get tired of.
